A bleed is an old printing term which is still very important today, and it is important for professional printers to work with in order to deliver a consistently high-quality final product. A bleed is the outer section of a design which extends beyond the intended trim lines of the final page. It is there so that should the paper be under-trimmed during production, the final page does not have a strip of unprinted paper on the edge. In other words, it means that printer does not have to worry about hitting the exact edge of the page during trimming. In modern printing, a bleed is usually 2 or 3mm around the outside of the design.
